Mushroom Kale and Potato Soup!
2 large white onions
1 whole celery
1 red pepper
1 package sliced mushrooms
4 big handfuls of kale
– Chop all of the veggies (except the potatoes) and sauté them in olive oil, low heat, in a big pot.
– Peel and cube the potatoes
– Once the veggies are sautéed add in 4 cups of reduced salt chicken stalk and the cubed potatoes.
– Let everything come to a boil until the potatoes are soft. Then use a hand mixer to purée.
Special Recommendations from Coach Vanessa:
Add in 1/2 cup coconut milk for more thickness
Flavour, salt, pepper and rosemary.
If you love mushrooms add an additional package of mushrooms!
