Coach Vanessa’s Quick Quinoa Salad – the perfect side dish!

Try this side on for size for your next BBQ! 

Ingredients:

  • 1 cup (dry) Quinoa
  • 1 and 3/4 cup Beef Broth
  • 1/2 red pepper chopped
  • 2 jalapeño chopped
  • 3 purple/ orange carrots from Farm Boy
  • Salt and pepper to taste

Instructions:

Cook your 1 cup dry quinoa in 1 3/4 cup beef broth. Bring to boil. Remove from heat and cover with lid. Let sit for 15 minutes and add in fresh chopped veggies! The perfect side for steak or beef kabobs!
